Rice and Wheat low in Food Value, High on Toxins, Shows Study

A recent study conducted by scientists from the Indian Council of Agricultural Research (ICAR) has revealed concerning findings regarding the nutritional value of rice and wheat consumed in India. The study highlights a significant decrease in the concentration of essential nutrients like zinc and iron in these staple grains over the past 50 years. This decline in nutritional value is attributed to the focus of breeding programs on developing high-yielding varieties to achieve food security, without adequately considering nutrient uptake from the soil. As a result, modern cultivars of rice and wheat have become less efficient in absorbing essential nutrients like zinc and iron.

Moreover, the study discovered a dramatic increase in the levels of arsenic, a toxic element, in rice. This finding is particularly alarming, as it indicates that not only are the staple food grains less nutritious, but they may also pose health risks. The research brings to light the adverse impact of the Green Revolution on India’s nutritional security and raises concerns about the growing burden of non-communicable diseases (NCDs) that could be exacerbated by these impoverished staple grains.

In response to these findings, agricultural scientists are exploring landraces and wild species of cultivated varieties to improve the nutritional profile of food grains. Under a special bio-fortification project launched by the Union government, scientists at ICAR and other agricultural universities have been working on developing bio-fortified varieties that are high in nutritional content. To date, ICAR institutes have developed 142 bio-fortified varieties, although these are not yet widely popularized or adopted by farmers.

Biofortification is a process aimed at increasing the nutritional value of food crops by enhancing their vitamin and mineral density through conventional plant breeding, agronomic practices, or biotechnology. This approach is distinct from food fortification, which involves adding trace amounts of micronutrients to foods during processing.

These findings underscore the critical need for a reevaluation of agricultural practices and breeding programs to ensure that food security does not come at the cost of nutritional quality.
