The Link Between Very Hot Drinks and Cancer Risk
In recent years, concerns have arisen about whether sipping on piping-hot coffee, tea, or other beverages could increase the risk of cancer. The short answer, based on extensive scientific research, is that it’s not the drinks themselves—but their temperature—that matters. Consuming beverages hotter than 65°C (149°F) is classified as “probably carcinogenic to humans” by the International Agency for Research on Cancer (IARC), an arm of the World Health Organization.
What the Evidence Shows
The primary concern centers on esophageal squamous cell carcinoma (ESCC), a type of cancer that affects the lining of the esophagus. The mechanism is thermal injury: repeatedly exposing the delicate esophageal tissue to scalding liquids can cause inflammation, cellular damage, and, over time, increase the likelihood of malignant changes.
Large-scale studies support this connection. A 2025 analysis of UK Biobank data involving more than 450,000 adults found a clear dose-dependent relationship. Individuals who preferred their drinks “very hot” (typically above 65°C) and consumed large volumes—eight or more cups per day—faced a risk of ESCC up to five to six times higher than those who drank warmer beverages or fewer cups.
Similar patterns have been observed in regions where very hot beverages are culturally common. In parts of South America, traditional consumption of scalding-hot yerba mate has been linked to higher ESCC rates. Comparable associations appear in areas of Asia, the Middle East, and Africa where extremely hot tea is routinely drunk.
Importantly, no strong evidence ties hot beverages to esophageal adenocarcinoma (the other main type of esophageal cancer) or to cancers elsewhere in the body when temperature is not a factor. Moderate-temperature coffee and tea are not considered carcinogenic; in fact, coffee was re-evaluated by IARC in 2016 and deemed “not classifiable” regarding overall cancer risk.
How Hot Is Too Hot?
The critical threshold identified by IARC is 65°C. Many experts recommend letting beverages cool to below 60°C (about 140°F) to minimize any potential risk while still enjoying good flavor. Freshly brewed coffee or tea often starts at 70–80°C or higher, but it cools rapidly. Waiting just a few minutes or taking smaller sips can significantly reduce exposure to extreme heat.
Putting the Risk in Perspective
Esophageal cancer remains relatively rare in most populations, and the absolute risk increase from hot drinks alone is modest for occasional consumers. The danger is greatest when very hot beverages are consumed frequently and in large quantities, especially alongside other risk factors such as smoking or heavy alcohol use, which can amplify the effect.
Practical Advice
The takeaway is straightforward: enjoy your favorite hot drinks, but give them a moment to cool. A small adjustment in habit—waiting a few minutes before drinking—offers a simple way to address this avoidable risk factor without giving up the pleasure of a warm cup.
Scientific understanding continues to evolve, but current evidence clearly points to temperature, not the beverage itself, as the key concern. Staying informed and adopting sensible precautions remains the best approach.
