The Spanish Coffee: A Fiery American Classic with Roots in Tradition

Despite its evocative name, Spanish Coffee is not a drink hailing from the cafés of Madrid or Barcelona. Instead, it is a distinctly American creation—a theatrical, boozy coffee cocktail that transforms a simple after-dinner drink into a spectacle of flame and flavor.

At its core, Spanish Coffee combines strong hot coffee with rum, coffee liqueur (typically Kahlúa), and an orange liqueur such as triple sec or Grand Marnier. It is often crowned with lightly whipped cream and served in a glass with a dramatic caramelized sugar rim. What sets it apart from other spiked coffees is its signature tableside preparation: high-proof rum is poured into the glass, ignited, and swirled to melt and caramelize the sugar coating the rim, infusing the drink with a subtle toasty sweetness.

Origins: From Carajillo to Portland Showpiece

The drink draws inspiration from the traditional Spanish carajillo, a no-frills combination of espresso and brandy (or sometimes rum) popular throughout Spain and Latin America. In its homeland, the carajillo is straightforward—equal parts bold coffee and spirit, served hot or over ice, with little adornment.

The elaborate version known as Spanish Coffee, however, emerged in the United States in the 1970s at Huber’s Restaurant in Portland, Oregon. Huber’s, the city’s oldest restaurant, turned the humble spiked coffee into a signature showpiece, complete with fire and flair. The performance quickly became a beloved ritual, helping cement the drink’s popularity in the Pacific Northwest and beyond.

The Classic Recipe

Making an authentic Spanish Coffee requires care, especially during the flaming step. A heatproof glass (such as an Irish coffee mug or large wine glass) is essential, and caution is advised when working with open flame.

Ingredients (for one serving):

  • ¾ oz overproof rum (151-proof is traditional for easy ignition)
  • ¼ oz orange liqueur (triple sec, Cointreau, or Grand Marnier)
  • 1½ oz coffee liqueur (Kahlúa or similar)
  • 3 oz freshly brewed strong hot coffee (dark roast preferred)
  • Superfine sugar (for rimming)
  • Lemon wedge (for rimming)
  • Lightly whipped cream
  • Freshly grated nutmeg or cinnamon (for garnish)

Preparation:

  1. Rim the glass by rubbing a lemon wedge along the edge and dipping it into superfine sugar to create an even coating.
  2. Pour the overproof rum into the glass and carefully ignite it. Gently swirl the flaming rum to caramelize the sugar rim until it turns golden and bubbly (10–20 seconds).
  3. Extinguish the flame by adding the orange liqueur.
  4. Stir in the coffee liqueur, then fill the glass with hot coffee.
  5. Top with a layer of lightly whipped cream and finish with a sprinkle of grated nutmeg or cinnamon.

The result is a balanced, warming cocktail—rich and slightly sweet, with layers of coffee bitterness, citrus brightness, and caramel depth, all tempered by the smooth cream.

For those wary of open flame, a non-flaming version can be prepared simply by skipping the ignition and combining the ingredients directly, though it lacks the signature caramelized rim.

Variations Around the World

While the Huber’s-style Spanish Coffee remains the most recognized in the U.S., other interpretations exist:

  • Traditional Carajillo: Espresso spiked with brandy or rum—no sugar rim, no cream, no fire.
  • Mexican-Influenced: Some versions swap triple sec for Licor 43, a Spanish liqueur with prominent vanilla notes.
  • Lighter Options: Omit the whipped cream for a less indulgent, more coffee-forward drink.

A Perfect Winter Nightcap

Spanish Coffee shines as a dessert-like digestif, especially on cold evenings. Its combination of caffeine, warmth, and moderate alcohol content makes it an ideal closer to a meal—sophisticated yet comforting, dramatic yet approachable.

Though its name may suggest Iberian origins, Spanish Coffee is a proud example of American bar innovation: taking a simple Old World tradition and turning it into a memorable, fiery performance.
