Garlic Beef Tips and Gravy: A Quick and Comforting Weeknight Dinner

There’s nothing quite like a hearty plate of tender beef tips smothered in a rich, garlicky gravy to satisfy your cravings on a busy evening. This Garlic Beef Tips and Gravy recipe is flavorful, easy to prepare, and ready in about 30-40 minutes on the stovetop. It’s the perfect comfort food that pairs beautifully with mashed potatoes, egg noodles, rice, or crusty bread to soak up every delicious drop of sauce.

Ingredients (Serves 4)

For the beef tips:

  • 1.5 lbs (about 680g) sirloin steak or beef tips, cut into 1-inch cubes
  • ¼ cup all-purpose flour (you won’t use all of it)
  • 2-3 Tbsp olive oil or vegetable oil
  • Salt and black pepper, to taste
  • Optional seasoning: ½ tsp each garlic powder, onion powder, and paprika for extra flavor

For the garlic gravy:

  • 3-4 cloves garlic, thinly sliced or minced (adjust for more garlic kick)
  • ½ cup dry white wine (or substitute with extra beef stock)
  • 1 cup beef stock or broth (low-sodium preferred)
  • 1 Tbsp butter
  • 1 small yellow onion, diced (optional, for added depth)
  • 1-2 tsp Worcestershire sauce (optional, for umami)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the beef: Pat the beef cubes dry with paper towels. Season generously with salt, pepper, and any optional spices. Toss the pieces in about 2-3 Tbsp of the flour until lightly coated (shake off excess).
  2. Brown the beef: Heat 2 Tbsp oil in a large skillet or Dutch oven over medium-high heat. Working in batches (don’t crowd the pan), sear the beef cubes for 2-3 minutes per side until nicely browned. Remove to a plate and set aside. Add a bit more oil if needed between batches.
  3. Build the gravy: In the same pan, reduce heat to medium. Add the butter and diced onion (if using). Cook for 2-3 minutes until softened. Add the garlic and cook for 30-60 seconds until fragrant (don’t let it burn).
  4. Deglaze and simmer: Pour in the white wine (or extra stock) and scrape up all the browned bits from the bottom of the pan. Let it simmer for 1-2 minutes to reduce slightly. Whisk in the remaining flour (about 1-2 Tbsp) if you want a thicker gravy, cooking for 1 minute.
  5. Finish the dish: Add the beef stock, Worcestershire (if using), and the browned beef tips back to the pan (with any juices). Bring to a gentle simmer. Cover and cook for 10-15 minutes, stirring occasionally, until the beef is tender and the gravy has thickened to your liking. If it’s too thick, add a splash more stock; if too thin, simmer uncovered a bit longer.
  6. Taste and serve: Adjust seasoning with salt and pepper. Garnish with chopped parsley. Serve hot!

Tips for Success

  • Tender beef: Sirloin tips or stew meat work best. For even more tenderness, you can simmer longer (20-30 minutes) or use a tougher cut like chuck and braise it.
  • Make it creamier: Stir in a splash of heavy cream or sour cream at the end for a richer gravy.
  • Mushroom version: Add 8 oz sliced mushrooms when cooking the onion and garlic for extra heartiness.
  • Slow cooker adaptation: Brown the beef first, then add everything to a crockpot. Cook on low for 6-8 hours or high for 3-4 hours. Thicken the gravy at the end with a cornstarch slurry if needed.

This Garlic Beef Tips and Gravy dish is forgiving and comes together fast—perfect for weeknights but tastes like it simmered all day. Whether you’re cooking for family or just treating yourself, it’s sure to become a regular in your dinner rotation. Enjoy your meal!
