Texas barbecue has always been more than food. It is identity, ritual, and regional pride wrapped in smoke. For generations the formula stayed largely the same: post oak or oak, long hours, beef at the center, and often pork sharing the pit. In the past few years that formula has started to change in a meaningful way. Fully or primarily halal barbecue restaurants are no longer rare experiments. They are earning critical recognition, generating strong revenue, and drawing mixed crowds of Muslim and non-Muslim diners across the state’s major metros. What began in community cookouts and small pop-ups has become a noticeable force in one of America’s most competitive food cultures.
The demographic foundation is straightforward. Texas is home to one of the largest and fastest-growing Muslim populations in the United States. Estimates place the number of Muslim residents between roughly 400,000 and 500,000, with the heaviest concentrations in the Dallas-Fort Worth metroplex and the Houston area. For many of these residents, traditional barbecue joints were effectively closed. Even when brisket appeared on the menu, shared smokers, pork sausages, and the risk of cross-contamination made the experience unreliable or impossible under Islamic dietary rules. That created a clear market gap. People who loved the idea of Texas barbecue but could not participate were ready for an alternative that did not ask them to compromise their faith.
Texas itself offered an unusual advantage. Unlike much of the rest of the American South, where pork often dominates, Central Texas-style barbecue is built around beef. Brisket is the undisputed star. That structural difference made a fully or mostly halal menu far more practical here than it would be in regions where ribs and sausage made from pork form the core of the experience. Pitmasters could focus on high-quality beef, source animals processed to halal standards, and still deliver the smoke, bark, and tenderness that define the style. Specialty suppliers have responded. Some smaller brands and established processors now offer premium beef, including Wagyu, raised and slaughtered according to those standards. The supply chain is not perfect, but it is far stronger than it was a decade ago.
The results are visible in the restaurants themselves. In 2025, Texas Monthly’s influential Top 50 BBQ list included halal-focused joints for the first time. Yearby’s Barbecue & Waterice, run by Black Muslim couple CJ and Sabrina Henley in Pilot Point, and SabarBBQ, operated by Zain Shafi, both earned places on the list. That recognition mattered. It signaled that the food was being judged on craft rather than novelty alone. Other operators have followed with commercial success. Kafi BBQ in Irving provides one of the clearest recent examples. Founder Salahodeen Abdul-Kafi left a high-paying tech career to open the restaurant in late 2024. In its first year the business generated just under $2.3 million in revenue and is projecting between $3.6 million and $4 million for 2026. Roughly half its customers follow a halal diet; the other half do not. The restaurant has received recognition from D Magazine and Eater, and it regularly sells out while emphasizing Texas-style execution with only subtle personal influences rather than heavy fusion.
Elsewhere, Levant BBQ in Houston has built a strong following and announced expansion into the Dallas area. Alzer’s near Austin, Truboy BBQ outside Houston, and a range of caterers and smaller operations have added density. Some of these businesses began as mosque cookouts or informal group chats among Muslim hobbyists who simply wanted to smoke meat without the complications of conventional barbecue culture. Over time those gatherings professionalized. What was once a weekend project became a business model.
The appeal is not limited to Muslim diners. Non-Muslim customers are showing up for the quality of the meat, the careful process, and the simple novelty of a pork-free Texas barbecue experience. Many associate the halal label with higher standards of animal handling and cleaner production. Operators frequently report that once people taste the product, the religious framing becomes secondary to the smoke ring and the flavor. In some restaurants the customer mix has shifted from heavily Muslim to roughly even. That crossover is important. It turns a niche offering into a broader business proposition.
Running a successful operation still requires real adaptation. Halal-certified beef often costs more than conventional product. Without pork—the high-margin, relatively inexpensive item that props up many traditional menus—operators must focus on quality and differentiation. Sausage production is technically harder because lamb casings are more delicate than pork ones. Equipment and workflows must prevent any cross-contamination. Some traditionalists still question whether barbecue without pork can be considered authentic. Most operators simply ignore the criticism and keep cooking. The ones who succeed treat the constraints as design problems rather than excuses.
There is also a cultural dimension that extends beyond the plate. Many of these restaurants function as comfortable third spaces. Muslim families and young people can gather without the constant calculation of what is safe to order. At the same time the doors remain open to everyone else. Some menus quietly incorporate flavors from the owners’ backgrounds—Iraqi, Pakistani, Levantine, or African American Muslim traditions—while still centering the Texas template of simple rubs, long smokes, and beef as the hero. The food is not trying to be fusion for its own sake. It is trying to be excellent barbecue that happens to meet a specific set of requirements.
The broader market context supports continued growth. The U.S. halal food sector is already large and expanding, driven by both rising Muslim population numbers and interest from non-Muslim consumers seeking ethical or high-quality options. Texas, with its economic opportunities and established immigrant communities, sits at a natural intersection of demand and supply. As more producers enter the space and more diners become familiar with the product, the barriers that once made halal barbecue rare continue to fall.
None of this means traditional Texas barbecue is disappearing. The classic joints that built the state’s reputation still thrive, and pork remains central to many of them. What is changing is the range of who can fully participate. A significant and growing group of people who previously stood outside the culture now have places where they can order everything on the menu without hesitation. At the same time, the wider barbecue community is being forced to confront questions of authenticity, inclusion, and quality in new ways.
The early commercial results, the critical recognition, and the mixed dining rooms suggest the trend has staying power. Texas has long claimed to do barbecue better than anywhere else. A growing number of pitmasters are proving that the claim can include a wider table without lowering the standard. In a state where beef is already king and the population is shifting, the logic is straightforward: serve the meat people love, remove the barriers that kept a large customer base away, and execute at a high level. The smoke continues. The audience is simply getting larger.
