There are few dishes that feel as deeply satisfying as a proper beef stew. The rich gravy, the soft chunks of beef that almost melt when you press them with a fork, the sweet carrots and creamy potatoes that soak up every bit of flavor — it is the kind of meal that makes a house smell like home. Traditionally, that kind of result required hours of simmering on the stove or in a slow cooker. On busy weeknights, most people simply do not have that kind of time.
Enter the Instant Pot (or any electric pressure cooker). What used to take three or four hours now comes together in about sixty to seventy minutes from start to finish, and most of that time is completely hands-off. The high pressure breaks down tough cuts of beef into something remarkably tender while the vegetables cook just enough to hold their shape. The result tastes like it spent all afternoon on the stove, yet you can have it on the table on a Tuesday night without stress.
This recipe is designed to be straightforward and reliable. It uses common ingredients, requires no special techniques beyond basic browning, and produces a thick, flavorful stew that freezes well and tastes even better the next day.
Why Pressure Cooking Works So Well for Stew
Beef stew traditionally relies on long, slow cooking to convert the collagen in tougher cuts like chuck into gelatin. That process creates both the silky texture of the meat and the body of the sauce. A pressure cooker accelerates the same chemical reaction. At high pressure, the boiling point of water rises, so the liquid inside the pot reaches temperatures well above 100°C / 212°F. Collagen breaks down much faster under those conditions.
The sealed environment also concentrates flavor. Aromatics, herbs, and the natural juices from the meat stay inside the pot instead of evaporating. When you open the lid after cooking, the kitchen fills with the same deep, savory aroma you would expect from a long-simmered pot, only the clock shows you have been working for a fraction of the usual time.
Choosing the Right Cut of Beef
For the best texture, start with boneless beef chuck roast. Chuck has enough connective tissue and marbling to become tender and flavorful under pressure. Pre-cut “stew meat” from the supermarket is convenient, but it is often a mix of leaner pieces that can turn dry or stringy. If you buy a whole chuck roast, cut it yourself into 1½-inch cubes. Larger pieces hold up better during the cooking process and give you a more satisfying bite.
Trim away large pieces of hard fat or silver skin, but leave a little fat on the meat. It renders during cooking and adds richness to the gravy. Season the cubes generously with salt and pepper before browning. This simple step seasons the meat throughout and helps create a flavorful crust.
Ingredients for a Classic, Reliable Stew
This version serves six generous portions and uses ingredients most home cooks already keep on hand:
- 2 pounds (about 900 g) boneless beef chuck, cut into 1½-inch cubes
- 2–3 tablespoons olive oil or neutral oil
- 1 large yellow onion, diced
- 3–4 garlic cloves, minced
- 1 pound carrots, peeled and cut into 1-inch chunks
- 1 to 1½ pounds Yukon Gold or red potatoes, cut into 1½-inch pieces
- 2½ to 3 cups low-sodium beef broth
- 2 tablespoons tomato paste
- 1–2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme (or a few fresh sprigs)
- 1 bay leaf
- Salt and freshly ground black pepper
- Optional but recommended: ½ cup dry red wine for deglazing, 1 cup frozen peas stirred in at the end, a pinch of paprika or a sprig of rosemary
For thickening at the end you will need 2 tablespoons cornstarch mixed with 2 tablespoons cold water.
Yukon Gold or red potatoes hold their shape better than russets, which can fall apart and cloud the sauce. If you prefer a thicker, more rustic texture, russets work fine. Frozen pearl onions can replace the diced onion if you want to save chopping time.
Step-by-Step Method
Begin by patting the beef cubes dry with paper towels. Moisture is the enemy of good browning. Season them well with salt and pepper. Set the Instant Pot to Sauté on the normal or medium setting and add a tablespoon or two of oil. When the oil is hot, brown the meat in batches. Crowding the pot causes the beef to steam instead of sear, so work in two or three batches and give each piece space. You do not need to brown every surface perfectly — a few golden sides are enough to develop flavor. Transfer the browned meat to a plate.
In the same pot, add a little more oil if needed and cook the diced onion until it softens and turns translucent, about three to four minutes. Stir in the garlic and tomato paste and cook for another minute. The tomato paste will darken slightly and lose its raw taste. If you are using red wine, pour it in now and scrape the bottom of the pot thoroughly with a wooden spoon. Those browned bits (the fond) are pure flavor. Let the wine reduce for thirty to sixty seconds.
Return the beef and any accumulated juices to the pot. Add the carrots, potatoes, beef broth, Worcestershire sauce, thyme, bay leaf, and a pinch of extra salt and pepper. The liquid should come about two-thirds of the way up the ingredients. Stir gently to combine. Cancel the Sauté function, lock the lid, and set the valve to Sealing. Cook on High Pressure for 30 to 35 minutes.
When the cooking cycle ends, allow the pressure to release naturally for 10 to 15 minutes. This gradual release keeps the meat tender. After that, carefully release any remaining pressure. Open the lid and remove the bay leaf (and any herb stems). Taste the stew and adjust the seasoning. At this stage the liquid will still be somewhat thin.
To thicken, mix the cornstarch with cold water until smooth. Set the Instant Pot back to Sauté and stir in the slurry. Let the stew simmer for two to three minutes until it reaches a glossy, spoon-coating consistency. If you are adding frozen peas, stir them in during the last minute or two so they heat through without turning mushy.
Serving and Storage Tips
Ladle the stew into bowls and finish with a sprinkle of chopped fresh parsley if you have it. Crusty bread is almost mandatory for mopping up the gravy. Mashed potatoes or buttered egg noodles also make excellent companions if you want a heartier plate.
The stew keeps well in the refrigerator for three to four days and freezes beautifully for up to three months. Cool it completely before storing. When reheating, add a splash of broth if the gravy has thickened too much in the fridge.
Simple Variations
Once you have the basic method down, small changes keep the dish interesting. Add sliced mushrooms with the onions for an earthier flavor. A teaspoon of smoked paprika gives a subtle depth. For a slightly brighter finish, stir in a teaspoon of balsamic vinegar or a squeeze of lemon juice at the end. If you prefer a gluten-free version, the cornstarch slurry already is; just confirm your Worcestershire sauce is gluten-free.
Some cooks like to skip browning the meat entirely for speed. The stew will still be good, but it will lack the deeper roasted notes that come from searing. If time is extremely limited, you can toss everything into the pot without browning and still get a respectable result in under an hour of total time.
Why This Recipe Works for Weeknights
The real advantage of this Instant Pot beef stew is the balance it strikes. Prep takes about fifteen minutes. Active cooking is limited to browning and a quick finish. The pressure cooker does the heavy lifting while you set the table, help with homework, or simply sit down for a few minutes. Yet the finished dish still delivers the comfort and depth people expect from a long-cooked stew.
It is also forgiving. Slight variations in vegetable size or exact liquid amounts rarely ruin the result. The natural release protects the texture of the meat, and the final thickening step lets you control the consistency exactly as you like it.
In the end, good beef stew is less about complicated technique and more about patience and decent ingredients. The Instant Pot simply shortens the patience required. What remains is a bowl of tender beef, sweet vegetables, and rich gravy that feels like it took far more effort than it actually did — exactly what most of us need on an ordinary evening.
