How Caviar Is Made: From Farm to Table
True caviar is one of the world’s most exclusive foods, yet almost none of it comes from the wild anymore. Strict international protections and the near-collapse of wild sturgeon populations mean that virtually every tin sold legally today begins life on a farm. The journey from a tiny fertilized egg to the glossy pearls on a plate can take more than a decade. Understanding that long, careful process reveals why genuine caviar remains both rare and expensive.
Sturgeon are ancient, slow-growing fish. Different species reach maturity at very different ages. Siberian sturgeon may produce harvestable eggs in five to eight years. Sevruga typically needs seven to ten years. Oscietra often requires eight to twelve years. Beluga, the most celebrated variety, can take eighteen to twenty-five years before the first high-quality harvest. That timeline alone explains much of the price. Farmers must feed, protect, and monitor fish for years with no return until the moment of harvest.
Modern farms raise sturgeon in carefully controlled environments. Many use recirculating aquaculture systems that filter and reuse the majority of water, keeping temperature, oxygen, and cleanliness within narrow ranges. Fish receive specialized high-protein feed. Stress is avoided as much as possible because a stressed female can reabsorb her eggs and lose an entire production cycle. Around the age of three or four, technicians determine the sex of each fish, usually with ultrasound or a small biopsy. Males are often harvested for meat. Females continue growing under close observation.
As females approach maturity, farms check egg development repeatedly. Ultrasound scans show the size and condition of the ovaries. In some cases a tiny sample is taken for closer inspection under a microscope. Only fish whose eggs have reached the ideal stage of firmness and gloss move forward. Selected females may be transferred to cooler, quieter tanks and held without feed for a short period. This purging step helps remove any residual feed flavors from the flesh and the eggs.
When the moment of harvest arrives, speed and precision matter. In the traditional method still used for most premium caviar, the fish is humanely stunned and killed. The belly is opened under sterile conditions and the intact ovary sacs are removed by hand. The entire process from live fish to separated eggs is completed within hours to preserve quality. A single large female can yield ten to fourteen percent of her body weight in eggs. In exceptional cases, especially with beluga, the yield can be significantly higher and extremely valuable.
Newer no-kill techniques are gradually gaining ground. One approach uses hormones to induce ovulation, after which the eggs are gently massaged or stripped from the live fish. Another involves a careful surgical incision that is later closed so the sturgeon can recover and produce again. These methods allow the same female to be harvested more than once and reduce the long growth cycle for each batch. They improve animal welfare and long-term sustainability, though many producers still prefer traditional harvest for the most consistent texture and flavor in top-grade caviar.
Once the ovary sacs are removed, the real craftsmanship begins. Workers carefully rub the sacs over fine mesh screens by hand. Intact eggs fall through while membranes and connective tissue remain behind. Broken eggs are avoided because they release fluid that makes the finished product soft and watery. The loose eggs are then rinsed repeatedly in very cold water, sometimes lightly salted, to remove blood, tissue fragments, and impurities. Any remaining defects are picked out with tweezers under bright light.
The cleaned eggs are graded by size, color, firmness, and overall appearance. This sorting determines the final commercial grade. Next comes the critical step of salting, traditionally called the malossol method. Fine salt is mixed in by hand at a level of roughly three to five percent by weight. The low salt content preserves the eggs, firms the membranes slightly, and develops flavor without masking the natural taste of the roe. Excess brine is drained carefully. At this point the product is true caviar: sturgeon eggs and a precise amount of salt, nothing more.
The freshly salted caviar is packed into tins under controlled conditions. Each batch is usually traceable to individual fish or small groups. The tins then enter cold storage at temperatures near freezing. Here the caviar matures for weeks or months. Like fine wine, the product develops deeper flavor and more refined texture during this resting period. Some producers grade the caviar a second time after maturation before releasing it for sale.
From the cold room the tins travel under continuous refrigeration to distributors, restaurants, and specialty retailers. Strict temperature control is essential at every stage. Once a tin is opened, the caviar is best eaten promptly while still cold. Traditional serving is deliberately simple so the delicate flavor and texture can stand out: a mother-of-pearl or other non-reactive spoon, often with blinis or plain toast, and minimal accompaniments.
Sustainability has become central to modern caviar production. Recirculating systems reduce water use and pollution. The meat of harvested sturgeon is sold rather than discarded. No-kill techniques, though still secondary, are expanding. Farms that maintain their own broodstock no longer need to rely on wild populations. These changes have transformed caviar from a product that once threatened sturgeon with extinction into one that can, when managed carefully, support the long-term survival of the species.
The entire process remains slow, labor-intensive, and highly skilled. From the multi-year care of the fish to the delicate hand-work of sieving, cleaning, and salting, every step is designed to protect fragile eggs that will eventually reach the table. That long chain of patience and precision is what separates genuine caviar from ordinary fish roe and explains why it continues to command such respect among chefs and diners.
